Nutritional Analysis of Ferments
The Foundation for Fermentation Fervor, the non-profit organization
Sandorkraut and some friends started last year to support fermentation
missionary work, is embarking upon a project to compare the
nutritional content of various ferments with the content of the exact same
ingredients unfermented. If anyone reading this has a lab to
recommend that performs nutritional analysis of foods, that would be extremely
helpful. Please email sandorkraut at wildfermentation.com. Also email if you
might be interested in collaborating on the project and submitting ferments
for analysis.
