GreenStar Cooperative Market’s Special Classes
Coping with Energy Descent through Relocalization
Wednesday, January 9, 7 - 9 PM
Oil depletion and climate change mean a future of decreasing energy use, mobility, and wealth. In this presentation, Jon Bosak and Bethany Schroeder of TCLocal will explain the challenges facing us and strategies for meeting those challenges at the local level. For more information about TCLocal, see http://www.tclocal.org.
Scientific Studies in Prevention and Reversal of Degenerative Disorders
Wednesday, January 16, 7 – 8:15 PM
This presentation will be given by health educator Sylvester Johnson (Ph.D. Applied
Physics) with selected slides donated by leading nutritionist T. Colin
Campbell, Ph.D., co-author of China Study. Sylvester will describe research
about food’s impact on cancer and heart disease, also suggesting that health
can be supported by consuming mainly plant-based, unrefined foods.
Permaculture: Designing an Ecosystem
Wednesday, January 30, 7 - 9 pm
There is a world view which identifies humanity as a vital part of the web of life; indeed people have for thousands of years been stewards of the Earth, always finding innovative ways to extract our needs for survival while improving life for other species and future generations. Join Finger Lakes Permaculture Institute Program Coordinator Steve Gabriel for a discussion on the design process as a tool for making effective, measurable changes in the way we work in the world. Steve will share design examples from the Cayuga Nature Center, where FLPCI has been working on development of a land use plan incorporating agricultural, forestry, habitat and interpretive elements.
All Above classes are free and open to the public, and will be held in the meeting room at GreenStar Cooperative Market’s West-End Store, 701 W. Buffalo St.

Cooking Class: Soups and Stews Tuesday, January 15, 7 – 9 PM
FEE: $5 for GreenStar members, $7 for non-members. Class size limited to 15 participants.
On a cold winter day, there is something wonderful about a bowl of warm soup or hearty stew. Soup, in its most nourishing form, relaxes the digestive system, allowing us to better receive the full value of the meal.
This class will focus on soups with vegetable, grain, bean or soy-based stocks. Learn how to cook Kinpira soup, a hearty, strengthening miso vegetable stock soup, yellow lentil dahl with deep fried sourdough bread, and more. Anita Devine will provide samples of the soups she prepares and recipes. Anita is a professional chef, has been practicing Macrobiotics for 25 years and is the owner of Devine Inspirations, a macro-vegan cookie company.
This class will be held in the meeting room at GreenStar Cooperative Market’s West-End Store, 701 W. Buffalo St.
